How To Make Lembas Bread Recipe Vegan?

  • 2 cups All Purpose Flour
  • 1 cup Rye Flour
  • ½ cup White Sugar
  • ¼ tsp Baking Soda
  • 1 tsp Salt
  • 6.   ½ cup Coconut Oil
  • 2 tsp Sugar
  • ¼ cup Water
  • 1 ¼ tsp Active Dry Yeast
  • ½ cup Almond Milk

Preparation Method

Step 1.

Combine the flour, sugar, and salt in a large mixing bowl.

Step 2.

When well-combined, add the coconut oil, yeast, and almond milk to the middle of the dough.  Then start kneading it to form a dough.  Using your hands for this purpose is perfectly fine, but you can also use an electric beater or stand mixer.  If kneading by hand, add water if necessary to make the dough soft enough for flexibility.

Step 3.

If you do not have an electric beater, or it isn’t easy to blend the ingredients, then you can use a stand mixer.  Switch on the stand mixer and add more flour to make a smooth dough.  Knead for about 5-6 minutes, then leave it under a cloth for about 15 minutes.

Step 4.

After dividing the dough into small equal parts, cover each with a piece of plastic wrap and leave them covered in the refrigerator for 1-2 hours.

Step 5.

After 1-2 hours, remove the dough from the refrigerator and leave it for a brief time to soften.  After softening, flatten them on your cutting board with a rolling pin and cut them into squares.

Step 6.

After cutting them into squares, you can fry them in hot oil or bake them for about 15 minutes at 375 F in the oven.  You may be required to fry more than once to get both sides browned well.

Step 7.

After baking or frying, sprinkle the sugar over them and allow them to cool down completely before eating.  You may eat these lembas slices of bread with various dips, but they are best enjoyed with butter or jam.
